Wash rice and drain the water and keep aside.
Heat ghee in pressure cooker add mustard seeds , cumin seeds ,hing, tejpatta, badi elaichi, kalimirch, dalchini stick and sauté for a few seconds.
Add onions and cook till they turn little golden brown.
Add cauliflower, carrot and turmeric powder, salt and mix it well.
Now add washed rice and cook for 1-2 minutes.
Add 2 cups of water and tamarind pulp. Once its start boiling give a nice stir otherwise vegetables and rice will get stuck at the bottom.
Close the lid of the pressure cooker and cook up to one whistle.
Turn off the heat.
Let the pressure release by itself.
Open the lid and add boiled peas and simmer for 1 -2 minutes.
Mix well gently so that the rice strands do not break
Drizzle ghee and garnish with coriander leaves. Serve hot with any raita.
Tip- can add 2 pinches sugar while boiling , it helps in retaining green colour of peas
